Usually I like to do a weekend recap on Mondays, but since my weekend involved a lot of sleep and NyQuil I will spare you from the boring details. Instead, I’m going to share with you recipe…you’re welcome. I saw these gorgeous looking colored peppers at a produce market and decided I had to have them. I didn’t really have any plan in mind when I bought the peppers as to what I would actually make with them so I let what was in the fridge guide me. Here’s what I came up with:
Mexican Style Stuffed Peppers:
1 cup ground protein (I used ground venison, but beef or turkey would work fine)
1/2 cup shredded cheese (I used a taco blend)
1/2 cup cooked quinoa
1/4 cup salsa
1/3 cup chopped onion
fresh cilantro to taste
1 tbsp. chili seasoning
2 large peppers
Preheat oven to 350. In a pan, brown your ground beef/venison/turkey. Cut the tops off of your peppers and remove all the seeds. They should look like this:
In a large bowl, combine all ingredients and mix.
Fill your peppers up and place the tops of the peppers back onto the peppers. Place peppers onto a lightly greased baking pan and bake in oven for about 20 minutes or until the peppers becomes soft. Let them cool and enjoy with lime slices, avocado, and cilantro.
